A dessert so fancy no one will believe you whipped this up with 5 ingredients. An Easy No Bake Cheesecake in just a matter of minutes. Biscoff Lotus are such a vibe especially in the Autumn months that they make a great photo op and scream fall desserts.

To make the cheesecake – it’s fairly simple. All you need to find is Biscoff Lotus cookies and Biscoff Spread.
Simply add the Biscoff cookies to a blender and let it run and finely crushed. Set aside 2 tbsp as you will use these later to top off your cheesecake.
Anyone who makes cheesecake knows that the base is the most important part and is at times can be a difficult challenge for those of us who don’t bake desserts often. I used a 9″ inch tan baking pan but an 8×8 works as well.
Mix the finely crushed biscoff cookies with the melted butter and mix until combined. Pour the mix and set the base pressing down finely. Whisk together cream cheese, Biscoff spread and Powdered sugar. Mix well until all ingredients are combined. Scoop the base and pour into the baking pan. Smooth the layer out as best as you can. Pour the melted Biscoff spread and smooth it out as well.
Sprinkle the remaining crushed Biscoff biscuits on top as you wish. I did mine around the corners and edges and place a whole biscoff in the center as you desire (optional). To decorate, the choice is all yours. Presentation is my favorite part and I really enjoy it.
Refrigerate for a minimum of 3 hours, although I recommend overnight so the cheesecake sets well.

- Crush 200g biscuits finely and set aside 2tbsp.
- Pour into baking pan with melted butter and mix until combined.
- Pour mix and set the base in an 9 tin inch baking pan. Press down finely.
- Whisk together cream cheese, Biscoff spread and Powdered sugar. Mix well until combined.
- Scoop the base and pour into the baking pan.
- Smooth the layer out.
- Pour melted 200g Biscoff spread, smooth it out.
- Sprinkle remaining crushed biscuits on top and place a whole one in the middle as you like.
- Refrigerate for a minimum of 3 hours. (I did mine overnight).
