Pink Hummus

Creamy Beet Hummus

Ingredients
  

  • 3 small cooked beets or 1 15 oz canned beets
  • 1 15 oz chickpeas
  • 1 tsp lemon zest
  • 1 lemon
  • 2 cloves minced garlic
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 1/4 tsp cumin
  • salt to taste
  • 1/3 cup pine nuts to garnish
  • 1/3 cup finely chopped parsely

Method
 

  1. Add the beets to the bowl of a large food processor. If using canned beets, drain the beets prior to adding them in food processor.
  2. Process until small bits remain.
  3. Add remaining ingredients (except for olive oil and garnishes) to the bowl and process until smooth.
  4. Add olive oil and continue to process until fully incorporated. Season to taste (I like to add a little extra tahini).
  5. Transfer your prepared beet hummus to a bowl and serve garnished with a drizzle oil, pine nuts, seasame seeds and fresh chopped parsley, if desired.
  6. Enjoy!
